#4. Make-ahead meal: classic Israeli salad
This salad is an Israeli breakfast staple, can be made ahead, and really can be served any time of day. But I like to prepare a big batch on Sunday and keep it the fridge for my morning meals. You'll need:

  • 4 Roma tomatoes, diced (2 cups)
  • ½ English cucumber, diced (1 ⅓ cups)
  • ½ yellow bell pepper, diced (⅔ cup)
  • ⅔ cup chopped Italian parsley
  • 3 tbsp. chopped green onion
  • 2 tsp. olive oil
  • 2 tsp. lemon juice

Toss together all ingredients in large bowl, season with salt and pepper, and top your serving off with olives, tahini, or a little feta if you like.

Thanks for the post Andrea. I'm all about the eggs and greens as well as the juice, I just avoid the apple to limit my sugar intake.. Will try the lemon water tip. Now what's for lunch? :)
