Healthy Pumpkin Muffins

Fall is in the air! Don't  you love this time of year? Autumn leaves, fall colors and the most amazing smells that flow through your house as you cook with yummy spices. 

Here's a delicious and healthy recipe that you can send your kids to school with. 

Healthy Pumpkin Muffins:

Ingredients:  

1 cup almond flour (I didn't have any on hand so I blended up some gluten free oats into flour) 
1 cup coconut flour 
1 tsp baking soda1/4 tsp salt 
1 tsp pumpkin pie spice (I added some extra cinnamon too) :) 
3 eggs lightly beaten 
3/4 cup pumpkin puree
3 Tbsp melted coconut oil
1 tsp vanilla extract
1/2 cup raw honey
60% cacao dark chocolate chips (optional)

Instructions: 
1. Preheat oven to 350 and grease muffin cups
2. In a bowl, whisk together flour, baking soda, salt and spice
3, Add the eggs, pumpkin, coconut oil, vanilla, honey, chocolate chips and mix.
4. Spoon into muffin cups & sprinkle a little extra spice on top
5. Bake for 20-25 minutes
6. Cool and enjoy!

Makes 10 muffins
