1 1/2 tablespoons white onion, chopped
1 teaspoon pickled baby capers, drained
1 1/2 teaspoons fresh dill, chopped
1 teaspoon Dijon mustard
1 teaspoon lemon juice
4 white sea bass fillets, each 4 ounces
1 lemon, cut in quarter
Preheat the oven to 375°F.
Mix the first five ingredients together in a small bowl, stirring to mix well.
Set each fillet onto a piece of aluminum foil, and drizzle with juice from one lemon wedge. Spread equal portions of the dill relish over all four pieces of sea bass.
Wrap the aluminum foil around the fish to seal in the juices. Place the wrapped fish onto a baking sheet, and bake for 10-12 minutes or until the fish is opaque. Serve immediately.
