2 ounces Manchego cheese
6 slices bacon
Preheat an oven to 475°F and cut the manchego cheese into ½ inch cubes.
Slice the dates, remove the pit, and replace it with a cube of cheese. Wrap the date in half a slice of bacon and secure with a toothpick.
Repeat the previous step for the other 11 dates and place on a baking sheet.
Bake the dates for about 12-15 minutes or until bacon is crispy and brown.
