2 medium acorn squash, halved and seeded
4 tablespoons fresh orange juice
1/2 teaspoon ground ginger
1/4 teaspoon ground nutmeg
Preheat an oven to 375 degrees Fahrenheit.
Place the four squash halves with the open side up into a shallow baking bowl.
Pour one tablespoon of orange juice into each opening.
Add the ginger and nutmeg evenly to each of the squash halves.
Wrap the bowl with aluminum foil and place into the oven.
Allow the squash to cook for 90 minutes or until desired consistency.
When finished take the squash out of the oven and let it sit for 5 minutes in order for the juices to settle.
