1/4 cup honey
2 tablespoons soy sauce
1 clove garlic, minced
1/4 teaspoon salt
1/4 teaspoon black pepper
2 acorn squash (2 1/2 pounds total) or 1 butternut squash (2 1/4 pounds)
Mix all ingredients except for the squash in a large bowl.
Peel and cut the squash in half to remove the seeds.
Slice the squash into rings about 1 inch thick and coat the rings with the honey mixture.
Place the squash rings on a baking sheet greased with butter and drizzle with additional honey mixture.
Set an oven to 350°F and roast for 40 Minutes or until the squash is tender. Turn the rings once while roasting.
