1 cup quinoa
2 cups water
1/4 cup fresh lemon juice
1/2 cup fresh cilantro, chopped
Rinse the quinoa in a fine strainer and drain.
Add the water and quinoa to a saucepan and bring to a boil.
Turn heat to low, cover, and cook for 15 minutes.
Turn off heat and let stand for 5 minutes. Fluff with fork.
When cooked, add the lemon juice and cilantro.
