2 cups fava beans, shelled
1/2 teaspoon salt
1 tablespoon olive oil
1/4 cup yellow onion, minced
1 clove garlic, minced
1/2 cup vegetable stock, chicken stock, or broth
1/4 teaspoon freshly ground black pepper
1 teaspoon fresh parsley, chopped
Bring a large saucepan 3/4 full of water to a boil. Cook the fava beans and 1/4 teaspoon of salt for 2 minutes. Drain and rinse immediately with cold water.
Remove the skins by pinching each bean on one side. Remove and discard the skins and set the beans aside.
In a large saucepan with a tight-fitting lid, heat the oil over medium heat. Sauté the onion 6 minutes until soft. Saute garlic 30 seconds, then add fava beans and bring to a boil. Reduce the heat, cover, and simmer 15 minutes, shaking the pan gently from time to time.
Season with the remaining salt and the pepper. Sprinkle with the parsley and serve immediately.
