2 cans tuna, drained
1/2 cup refried beans
1/2 cup low-fat sour cream
1/2 cup canned corn, drained
2 tablespoons hot sauce
1 tablespoon garlic, minced
1 teaspoon cumin
1 tablespoon butter
4 whole-wheat tortillas
1/2 cup shredded Mexican cheese blend
In a large bowl, combine the tuna, beans, sour cream, corn, hot sauce, minced garlic, and cumin.
Melt the butter in a skillet over medium high heat and cook each tortilla for 1 minute on each side.
Layer the tuna mixture, some cheese, and a second tortilla shell on two of the tortillas in the skillet. Cover and cook for 1 minute, flip, cover, and cook on the other side for 1 minute.
Cut into eighths and serve immediately.
