Salsa
1/3 cup kalamata olives, pitted and diced
1 plum tomato, peeled, seeded, and diced
1 shallot, minced
1 tablespoon fresh basil, minced
1 tablespoon capers
1/4 teaspoon grated orange zest
1 teaspoon fresh lemon juice
1 teaspoon olive oil
Salt and black pepper to taste
Cod
1 pound cod fillets
Lemon-pepper seasoning to taste
Salt to taste
1 teaspoon olive oil
Combine all salsa ingredients together and set aside.
Season the cod with salt and lemon pepper.
Add the olive oil to a skillet and heat until hot.
Fry the cod fillets for 4-5 minutes on each side. Do not overcook.
