1 small onion, sliced
½ medium green bell pepper, cut into strips
3 cups eggplant, cut into ½ inch cubes (1 lb)
1 small zucchini, cut into ¼ inch slices (1 cup)
2 medium ripe tomatoes, cut into eighths
2 cloves garlic, finely chopped
2 tablespoons chopped fresh parsley
1 tablespoon chopped fresh or ½ teaspoon dried basil
½ teaspoon salt
¼ teaspoon black pepper
In a skillet, cook all ingredients except the tomatoes over medium heat until the vegetables are tender; remove from heat.
Stir in the tomatoes. Cover and let stand for 2-3 minutes or until the tomatoes are warm.
