Ingredients

  • 2 tablespoons water

  • 1 small onion, sliced

  • ½ medium green bell pepper, cut into strips

  • 3 cups eggplant, cut into ½ inch cubes (1 lb)

  • 1 small zucchini, cut into ¼ inch slices (1 cup)

  • 2 medium ripe tomatoes, cut into eighths

  • 2 cloves garlic, finely chopped

  • 2 tablespoons chopped fresh parsley

  • 1 tablespoon chopped fresh or ½ teaspoon dried basil

  • ½ teaspoon salt

  • ¼ teaspoon black pepper

Directions

  • In a skillet, cook all ingredients except the tomatoes over medium heat until the vegetables are tender; remove from heat.

  • Stir in the tomatoes. Cover and let stand for 2-3 minutes or until the tomatoes are warm.
