2 tablespoons unsalted butter
2/3 cup water, divided
2 medium leeks, washed and thinly sliced
1/4 teaspoon salt
1/4 teaspoon black pepper
1/2 cup sour cream
1 1/2 teaspoons all-purpose flour
4 pieces thick white fish fillets
1 tablespoon chopped dill
Heat a skillet over medium heat and add the butter. Add the1/3 cup water along with the leeks, salt, and pepper. Cover and simmer for about 10 minutes. Stir once or twice.
Mix together sour cream and flour in a small bowl.
When the leeks are tender, add the sour cream and flour mixture and the remaining 1/3 cup of water.
Season the fish with salt and pepper. Add the fish to the leeks and cook, covered, about 8-10 minutes.
Sprinkle with dill and serve.
