2 1/2 cups organic all-purpose white flour

2 eggs, beaten
1/2 cup milk
1 tablespoon butter
Mix flour and salt in a large bowl. Add the remaining ingredients and knead the dough for approximately 5 minutes or until smooth.
Cover the bowl and allow dough to rest for 10 minutes.
Put a thin layer of flour onto a countertop. Using a rolling pin, spread the dough out until it forms a 1/8- or 1/4-inch thick layer.
Cut the dough into desired lengths and shapes, and allow the noodles to air-dry (approximately 45 minutes).
When desired, cook the pasta in a large pot of boiling water.
