Ingredients

  • 1 tablespoon unsalted margarine

  • 2 cups chopped mushrooms

  • 2 onions, chopped

  • 2 cups cooked skinless turkey breast strips

  • 4 small potato rolls, split

  • 3/4 cup shredded reduced fat Monterey jack cheese

Directions

  • Preheat a broiler.

  • In a large skillet, melt the margarine and add the mushrooms and onions, stirring as needed until softened. Add the turkey and cook until heated through.

  • Arrange the rolls on a baking sheet and divide the turkey mixture among them and sprinkle with cheese. Broil until the cheese is melted.
