2 cups water
1 cup quinoa
1 pinch salt
2 carrots, grated
1 cucumber, diced
3 medium tomatoes, diced
1 cup fresh parsley, chopped
1/4 cup lemon juice
1/2 teaspoon salt
1/4 cup olive oil
2 bunches green onions, diced
In a medium-sized pot, bring the water to a boil and add quinoa with a pinch of salt. Reduce the heat, cover, and simmer until the quinoa is cooked, approximately 15 minutes. Set aside and let cool.
In a large mixing bowl, add the carrots, cucumber, tomatoes, parsley, lemon juice, salt, olive oil, and green onions. Mix well.
Fluff the quinoa with a fork and combine it with the contents in the mixing bowl.
