1 pound ground turkey breast
2 large egg whites
1/4 cup whole-wheat bread crumbs
1/4 teaspoon salt
1/4 teaspoon ground black pepper
2 teaspoons olive oil
1 cup fresh or frozen yellow or white corn
2 cups tomatoes, diced
1 15-ounce can low-sodium black beans, drained and rinsed
1/2 cup low-sodium chicken broth
1 tablespoon fresh lime juice
1 teaspoon ground cumin
1/4 cup fresh cilantro, chopped
Add the turkey, egg whites, bread crumbs, salt, and pepper to a large bowl. Mix well then shape into 16 meatballs.
Heat the oil in a large skillet on medium-high heat. Add the meatballs to skillet and cook for 3-5 minutes, turning frequently. Meatballs should be brown on all sides.
Add the corn, tomatoes, beans, chicken broth, lime juice, and cumin to the skillet and mix well. Partially cover the skillet and reduce the heat to medium. Cook for another 3-5 minutes, until the meatballs are cooked all the way through.
Stir in cilantro and serve.
