2 cups white flour
3 teaspoons baking powder
5 teaspoons salt
5 teaspoons baking soda
1 cup granulated sugar
3/4 cup apricot halves, chopped
1 1/2 teaspoons grated lemon zest
1/2 cup walnuts, chopped
2 tablespoons unsalted butter
1 large egg
1 cup milk
Preheat the oven to 350°F. Sift together the first 5 ingredients. Stir in the apricots, nuts, and lemon zest.
Add the wet ingredients all at once, and stir only enough to moisten. Do NOT beat.
Pour into a greased loaf tin and bake for 1 hour.
