1 cup old fashion rolled oats
1 cup non-fat milk
1 cup whole wheat flour
1/2 cup brown sugar
1/2 cup unsweetened applesauce
2 egg whites
1 teaspoon baking powder
1/2 teaspoon baking soda
1/2 teaspoon salt
1 teaspoon cinnamon
1 teaspoon sugar
Soak the old fashioned oats in milk for one hour.
Preheat oven to 400 degrees F.
Spray a muffin pan generously with cooking spray.
Combine the milk and oat mixture with the egg whites and applesauce. Mix until uniform.
Whisk the remaining dry ingredients together in a separate bowl.
Add the dry ingredients to the wet ingredients and mix the batter until just combined.
Spoon the batter into the muffin pan.
Combine sugar and cinnamon and use this mixture to top each muffin.
