I wanted something other than my morning oatmeal today. So instead, I went with sweet potato mixed right into my cooked egg whites... delicious!
Did you know that sweet potatoes can be very helpful when trying to lose weight? Most people wouldn't think a potato could help in that area, but it can, and here's why--sweet potatoes' carbohydrates and high fiber content help you feel full for longer, which can help prevent snacking and promote weight loss. Adding sweet potatoes to your diet may help you get the maximum amount of nutrition, as they are a great source of antioxidants, have loads of vitamin A and have 25% more potassium than bananas. Eat the skins too, they taste good and add important fiber to your diet. I find sweet potatoes go along with just about anything, and are good at breakfast, lunch, dinner and all times in between. Whether you are having chicken, fish, steak or my recent favorite - egg whites!
Build healthy habits in your kids, and enjoy healthy foods. My high-school-age sons both take sweet potatoes in their lunches to school (a great way to get Dad's big build)!
I wash them, prick them a couple of times with a fork and bake them for about an hour at 350 degrees. I always make a big batch so they are ready whenever it's time to eat! For a quick snack eat them cold, skins and all.
